
1/4 cup mayonnaise (try light) | 4 C coarsely chopped kale, any tough stems removed |
2 Tbsp cider vinegar | 2 C matchstick-cut peeled broccoli stems or broccoli slaw |
1 Tbsp extra virgin olive oil | 2 C thinly sliced trimmed Brussels sprouts (8 ounces) |
1 tsp poppy seeds | 1/2 C sliced red cabbage |
1 tsp sugar or honey | 3 Tbsp dried cranberries |
1/4 tsp salt | 3 Tbsp toasted pumpkin seeds |
1/4 tsp ground pepper |
1. Whisk mayonnaise, vinegar, oil, poppy seeds, sugar (or honey), salt and pepper in a large bowl. Add kale, broccoli stems (or slaw), Brussels sprouts, red cabbage, cranberries and pumpkin seeds; toss until well coated with the dressing.
