Beef Orange Stir Fry

Ingredients:

  • 1 Tbsp cornstarch
  • 1/4 C cold water
  • 1/4 C orange juice
  • 1 Tbsp reduced-sodium soy sauce
  • 1/2 tsp sesame oil
  • Dash red pepper flakes
  • 1/2 lbs boneless beef sirloin steak, cut in strips
  • 2 tsp canola oil, divided
  • 3 C frozen sugar snap pea stir-fry vegetable blend, thawed
  • 1 garlic clove, minced
  • 1 C hot cooked rice

Instructions:

  1. In a small bowl, combine the first 6 ingredients until smooth; set aside.
  2. In a large skillet or wok, stir-fry beef in 1 tsp oil until no longer pink, 3-4 minutes. Remove with a slotted spoon and keep warm.
  3. Stir-fry vegetable blend and garlic in remaining oil for 3 minutes. Stir in cornstarch mixture and add to the pan.  Bring to a boil; cook and stir until thickened, about 2 minutes.  Add beef; heat through.  Serve with rice.
