Turkey and Apple Arugula Salad

  • 1/2 C orange juice
  • 3 Tbsp red wine vinegar
  • 3 Tbsp sesame oil
  • 2 Tbsp minced fresh chives
  • 1/4 tsp salt
  • 1/4 coarsely ground pepper
  • 4 C cubed cooked turkey
  • 4 tsp curry powder
  • 1/2 tsp fresh ground pepper
  • 1/4 tsp salt
  • 1 large apple, chopped
  • 1 C green grapes, halved
  • 3 C fresh arugula or baby spinach
  • 1 can (11 ounces) mandarin oranges, drained
  • 1/2 C chopped walnuts
  • 1/2 C pomegranate seeds
  1. For Dressing, whisk together first six ingredients.
  2. Place turkey in a large bowl; sprinkle with seasonings and toss to combine. Stir in apple and grapes. Add arugula and mandarin oranges. Drizzle with dressing; toss lightly to combine.
  3. Sprinkle with walnuts and pomegranate seeds. Serve immediately.
